Growing up my husband's Mom used to make this in the summer with fresh tomatoes. I love to keep family traditions and memories alive so I made this for my kids, and they loved it.

Ingredients:
3-4 Large fresh vine ripened tomatoes
1lb. Fresh mozzarella
1 Bunch fresh basil leaves
Extra virgin olive oil
Balsamic vinegar
Salt
Cracked black pepper

Slice tomatoes into 1/4 inch thick slices. Slice mozzarella into 1/4 inch thick slices. Layer tomatoes and mozzarella on a plate or platter. Cut or rip basil leaves and evenly place on top. Drizzle olive oil and balsamic vinegar over top. Sprinkle salt and pepper to your taste.

Avocado Lime Hummus

Hummus and avocados are two of my kids favorite things to eat. I wanted to make a hummus recipe and my kids wanted avocado on the side so I decided to mesh the two together and see what we came up with. This avocado hummus is delicious and the serving possibilities are endless. My kids licked the bowl clean and wanted more, definitely a winner in my house.

Avocado Lime Hummus

1 15oz. can Garbanzo beans

Juice of 1 Lime
1 tbs Tahini (optional)
1 clove Garlic
2 tbs olive oil
1/2-1 tsp Salt
1/2 tsp Smoked paprika + dash for serving
1/2 tsp Black pepper

Directions are super easy! Add all ingredients to a food processor or blender and blend until smooth. Serve with your favorite chips, crackers, veggies, or smear on toast, use in a sandwich, on nachos…….like I said the possibilities are endless.
