Banana Chocolate Chip Protein Pancakes
1 Super ripe banana
1 tsp Baking powder
1 Tbsp flax meal + 2 1/2 Tbsp water
Pinch of salt
1/2 tsp Vanilla
1 tbs Almond butter
1 tbs coconut oil
1/3 cup Almond milk
1/4 cup Gluten free oats
1/2 cup Gluten free oats made into flower
1 tbs Vanilla protein powder
Chocolate chips
Mix flax meal, water and salt in a small bowl and set aside. Mash banana with baking powder in a bowl until well mixed. Add flax, vanilla, almond butter, coconut oil, almond milk and mix well.Place 1/2 cup oats into a blender or food processor and grind into flower. Add flower, other oats, protein powder to the wet ingredients and stir until combined. Stir in desired amount of chocolate chips. Spread mixture onto hot griddle oiled with coconut oil. Cook until browned on both sides and swerve with favorite pure maple syrup. I used chocolate almond butter and bananas.
Chocolate almond butter
Mix equal parts almond butter and chocolate chips in a small microwave safe bowl. Melt in 15 second increments until smooth. Spread over pancakes and enjoy!
