Seared Tofu Salad With Thai Peanut Dressing

Seared Tofu Salad With Thai Peanut Dressing

I have a hard time getting tofu to taste great at all with its lack of flavor. I finally found a great way to cook tofu that made even my kids come back for seconds and thirds. Nothing goes better with tofu than a delicious Thai Peanut Dressing which topped it off perfectly.

Seared Tofu
Ingredients:
1 14 oz. package Extra firm tofu
1 Tbs Soy sauce
1 Tbs Honey
1 tsp Fresh garlic crushed
1/4 tsp Sesame oil
1 tsp Tahini
1 Tbs Sesame seeds

1-2 Tbs Avocado oil for searing pan

Salad
Ingredients:
1 bunch Lettuce - I used Romaine and Butter
1/2 Red bell pepper chopped
1/2 cup sliced Carrots
1/4 cup sliced Green onion
1/4 cup sliced Almonds
1/2 cup Edemame

Thai Peanut Dressing Recipe

Directions:
Drain tofu and pat dry with paper towels making sure not to break it apart. Slice tofu into 1-2 inch wide by 1/4 inch thick slices and set aside. Mix next six ingredients in a bowl until well blended. Add tofu and let marinate while you get your pan hot. Get your pan set at medium/high heat. Once your pan is hot add Avocado Oil and make sure to spread it over the whole pan. Once oil is hot add tofu quickly laying them flat to get a nice sear. Wait 2-3 minute then flip and sear other side of the tofu. Once tofu is nice and crispy brown on both sides place on a plate and set aside.
Cut all vegetables and build your salad on a large serving plate. Once salad is assembled place tofu on top and drizzle with Thai Peanut Dressing.
