Sugar Free Chocolate Souffle

I am always trying to find new recipes that are clean and delicious. I decided to figure out a sugar free version of a chocolate soufflĂ© and here is the delicious results. I hope you enjoy this, I know I did.

Ingredients
3 Tbs vegan or organic butter
2 Tbs unsweetened cocoa
3 ounces extra dark chocolate chips
1/2 tsp pure vanilla extract
2 egg yokes
2 egg whites
1 Tbs agave
1 Tbs stevia powder
Pinch of salt
Pinch of cream of tarter

Heat oven to 375 degrees. Use 1 Tbs of the butter to grease two 8 oz. ramekins. Coat butter with the cocoa, tap out excess. 

In a glass bowl, over a pot of boiling water, melt the chocolate chips with remaining butter. Stir until melted and smooth. Remove from heat and add vanilla. Whisk egg yokes one at a time into chocolate until smooth. Set aside.

In separate bowl whip egg whites, agave, stevia, salt and cream of tarter until stiff wet peaks form. Gently fold egg white mixture into chocolate. Spoon mixture into ramekins. 

Bake for 20 minutes or until puffed and set.
